When entering any pastry shop in Saxony, don’t forget to ask for a slice of Eierschecken. It is available in many different variations. There is no single recipe, almost every family in Saxony has their own family recipe, well preserved and handed down from generation to generation.

It is a cake made up of three layers. The upper one is made up of eggs, butter, sugar, vanilla. 1st LAYER: THE SHORT PASTRY
• 80 g of butter • 100 g of sugar • 200 g of flour • ½ pack of baking powder • 2 tablespoons of breadcrumbs • 1 egg • Pinch of salt Preparation Mix the butter, sugar and egg and gradually add the flour and yeast. Knead until you get a homogeneous mixture. If it is too soft, keep it in the fridge for half an hour wrapped in plastic wrap and then place it in a round pan well sprinkled with breadcrumbs on the bottom or covered with foil, keeping the edges well raised.
2nd LAYER: QUARK AND VANILLA PUDDING
2 tablespoons of corn starch • 750 g of ricotta • 50 g of corn starch • 400 ml of milk • 100 g of sugar • 1 bag of custard Preparation To cook the custard, follow the instructions on the package but use only 400 ml of milk. Now mix well the cornstarch, ricotta, sugar and a third of the cooked custard, and roll it out evenly on the shortcrust pastry layer.
3rd LAYER: EIERSCHECKE
3 eggs • 100 g of sugar Prearaction Separate the 3 yolks from the whites and mix them with the remaining custard until a creamy mass is created. In the meantime, whip the egg whites until stiff and pour them with the well blended mixture, trying not to let them disassemble. Then place the Eierschecke layer on the cottage cheese layer. Bake in a preheated oven at 160 degrees for about 60 minutes until the top layer is golden brown. If necessary, cover with aluminum foil after half the cooking time so that it doesn’t get too dark. After cooking, brush the cake with melted butter and let it cool inside the pan, and then put it in the fridge for half a day before consuming it.
