Meravigliosa Puglia! Weekend a Mesagne, borgo storico dal cuore “gourmet”

Oggi vi portiamo alla scoperta di uno dei borghi più suggestivi della Puglia.
La nostra meta è Mesagne, nel pianeggiante territorio dell’Alto Salento., un antico borgo tutto da scoprire che vi riserverà molte sorprese, a cominciare dalla sua insolita (e unica) pianta, a forma di cuore, alle delizie gastronomiche, ai deliziosi vini del territorio fino a una ricetta top dello Chef Vincenzo Elia.
Mesagne è un importante centro messapico. Città dalla posizione strategica a metà sulla via che univa il Borgo d’Oria con il porto di Brindisi. E’ una delle città più estese della Regione, non lontano dal Mar Ionio e Adriatico, per cui gode di un clima mediterraneo che favorisce le attività agricolo-commerciale (uve, verdure, olive, tabacco, ecc.).Sorge lungo l’antica Via Appia romana ed è stata anticamente un importante centro messapico (Messania), di cui sono state scoperte le necropoli nel centro storico. Tra le sue vie ancora oggi si possono scoprire i resti di antiche civiltà, testimoniate dalla presenza delle necropoli.

All’interno el Catello, ospita reperti archeologici con tombe, anfore e vari vasi, utensili, incisioni e pitture, gioielli e altri oggetti appartenuti al popolo messapico ed altre antiche civiltà, tra cui un importante mosaico romano proveniente dalle terme situate nell’agro della Masseria Malvindi.

In Puglia, si sa, si mangia benissimo, le porzioni sono generose e i prezzi sono contenuti Mesagne non è da meno e ci offre molti ristoranti davvero ottimi dove gustare la cucina locale.
Era davvero un forno antico che Francesco, giovane chef pugliese ha preso in mano, rinnovato “quel poco che basta” e impostato su una nuova cucina dove la tradizione pugliese incontra versioni “gourmet”, dalle pittule, tradizionali palline di pane, allo spaghettone con rapa, cozze e crumble di pane, alla crema di zucca con baccalà e porro fritto. Vi è venuta l’acquolina in bocca ?..
Insegna e specchio decò, piatti e bicchieri in stile “casa della nonna” e arredamento vintage. Spiccano nel menu: le polpette al sugo, i ravioli con orata e i cavatelli ai tre pomodori e gamberi.
Popolare e affollato dai cittadini di Mesagne, anche a mezzogiorno…buon segno! Saporiti piatti di carne e pesce, basterà citare gli gnocchetti di patate e zucca, rigorosamente fatti in casa, saltati con cozze e filetti di sogliola
Braceria Barbanera
Voglia di carne? Ecco la vostra meta: spettacolari braciole, le bombette (fettine di carne di maiale ripiene di pancetta e caciocavallo cotte alla brace), i tradizionali turcinieddi, o ghemmarieddhi, chiameteli come volete, sono mini-involtini a base di interiora di agnello, cotti alla brace, da mangiare caldissimi, autentici testimoni di una tradizionale squisitezza locale. Spettacolari!
L’incontro
La simpatia della Chef Laura, la cura della tavola, dai piatti decorati a mano, ai tovaglioli ricamati, ai pensierini gentili che vi accompagnano per tutto il pasto: dagli assaggini di focaccia alla ciotolina di mandorle al momento del caffè. Impera un menu al 100% pugliese, a cominciare dalle insuperabili orecchiette, cime di rapa acciuga e pangrattato arrosto.

I VINI DEL SALENTO
Nel territorio di Mesagne troiamo nobili vitigni lavorati, oltre che nelle cantine, anche in modo artigianale contadini, Primitivo, Bianco Verdesca e un apprezzato Rosè, vino dalla tradizione antichissima.
Tipico della penisola pugliese, parrebbe, infatti, che la sua produzione risalga ai tempi in cui il Salento faceva parte delle colonie della Magna Grecia. Qui, su un terreno calcareo e argilloso cresce il vitigno del Negroamaro, le cui uve, attraverso sofisticate tecniche di elaborazione, danno vita al vino rosato del Salento., ottimo compagno di antipasti di pesce, risotti e piatti di pesce, soprattutto se a base di pomodoro, oltre ad essere un connubio ideale con dolci a base di frutta.
Citazione dovuta al caratteriscico Negroamaro, autoctono tipico della zona, coltivato quasi esclusivamente in Puglia e del quale esistono ancora vecchi vigneti coltivati con la tradizionale tecnica dell’alberello pugliese. Può essere vinificato in purezza o utilizzato in uvaggio con la Malvasia di Brindisi e di Lecce, altra varietà fortemente identificativa di questo territorio, della sua storia e della tradizione ereditata da nonni e genitori.
Negroamaro, Primitivo e Susumaniello el l’Alberello la cui salvaguardia determinauna politica incentrata sulla salvaguardia dell’ambiente, sulla sostenibilità e sulla lotta integrata.
DOVE ALLOGGIARE
Vi portiamo nella Tenuta Moreno, ricavata da una tipica masseria del ‘700 immersa in un immenso parco mediterraneo. E’ una grande struttura , 84 camere di cui alcune dotate di giardino privato e jacuzzi,Due ristoranti , sale per eventi e, convegni e matrimoni una meravigliosa piscina , immersa nel rigoglioso giardino fiancheggiato da ulivi secolari ed una seconda piscina scavata nella roccia..La Spa è realizzata con materiali naturali e caratterizzata da ampie vetrate con vista panoramica sull’aranceto. Tra la vasta gamma di rituali proposti Moreno Ritual prevede un bagno alle erbe del Giardino della Tenuta: un impacco a base di yogurt arricchito con bacche di Goji, Uva Urisina e Uva nera per donare alla pelle di viso e corpo un booster di calcio, vitamine A e B, lipidi e proteine,una maschera multivitaminica a base di Acerola, Mirtillo e Avena.Tenuta Moreno è stata una delle prime strutture non solo in Puglia ma a livello nazionale, a perseguire una filosofia ecosostenibile anche in termini economici e sociali coniugando ambiente, tradizione, ecologia ed economia. Tutto in Tenuta Moreno ruota intorno al rispetto dell’ambiente, diventando un ecosistema complesso quale quello di un patrimonio naturalistico e paesaggistico.
Una mega production che però sa rispettare territorio, storia e tradizioni.
Tenuta green
Le scelte impiantistiche secondo energia rinnovabile: pannelli solari, eolici, geotermici, le attrezzature, gli arredi, i materiali, l’offerta enogastronomica, perfino l’orto, oggetto di visite guidate e di percorsi: tutto ruota attorno all’aspetto ecologico e sostenibile.
Qui scoprirete preziose varietà autoctone come il pomodoro Fiaschetto di Torre Guaceto, il pomodoro Regina di Torre Canne ed il peperoncino dolce di Carovigno, irrinunciabile nell’accompagnare magistralmente la purea di fave .Tra le soprese dell Tenuta, una collezione di fichi con infinite varietà provenienti da tutto il bacino del Mediterraneo. La tenuta ospita un pollaio “cinque stelle” per uova etiche da animali allevati all’aperto tra cui il pollo Leccese, razza in via di estinzione nonostante sia il protagonista assoluto dei decori sui piatti dell’antica tradizione di ceramiche pugliesi.
Al timone di questo grande vascello troviamo Pierangelo Argentieri, Presidente della Federalberghi Brindis e promotore di mostre diffuse oltre che a Hortus Puglia che a Maggio e Ottobre riunisce ad Ostuni produttori di frutta e verdura da tutte le parti d’Italia per un evento che promuove il verde pubblico, l’ orto e la sostenibilità. Da più di 21 anni, Pierangelo è presente in Tenuta, continuando così la tradizione di famiglia.
L’ho incontrato per una breve intervista.
Buongiorno Pierangelo, come è nata Tenuta Moreno?
Da un piccolo ristorante di provincia che si chiamava “ la Taverna Del Cacciatore” impostato principalmente sulla cacciagione. In seguito nel menu sono subentrati pesce e verdure fino a una cucina contemporanea, attenta alla sostenibilità, al non spreco e contraria all’uso della plastica. Un discorso iniziato nel 2013, proseguito con la nostra presenza ad Expo 2015 come rappresentati della Puglia nel ristorante del padiglione Italy dove ogni mese presentavano un’offerta gastronomica diversa.
Siamo una realtà che è un presidio di questa parte del territorio. anche per quanto riguarda la struttura alberghiera che, grazie alle numerose sale, permette svariati eventi, matrimoni, conventions, cene e banchetti, spesso in contemporanea.
Nuovi progetti?
La nostra attività continua a Brindisi abbiamo recentemente inaugurato l’Hotel e il Ristorante Palazzo Virgilio, mentre nelle vicinanze di San Pancrazio Salentino, abbiamo la Masseria Malvindi, struttura cinque stelle con 14 camere vicino alle antiche terme romane.
Molti visitatori ”gourmet” sono interessati alle lezioni di cucina tipica locale, Voi ne organizzate ?
Certamente, le nostre strutture offrono cooking classes, dove si apprendono le tecniche per fare moxxarella, taralli e orecchiette, che verranno poi gustati con sugo di pomodoro e braciole o melenzane per chi preferisce un condimento vegetariano. Qualche escursione”gourmet”?
Promuoviamo il territorio con visite a luoghi dove è possibile trovare ancora una ristorazione tradizionale, come nelle cittadine di Ostuni, Ceglie Messapica e San Michele Salentino, dove si sfornano focacce da primordiali forni in pietra e dove ancora si cucina all’antica, per esempio la carne “al fornello” e si conservano ricette storiche che utilizzano le interiora.
Piatti storici, quindi?
Certo, rituali che hanno origini remote, quando, specialmente nell’antica Grecia, c’era la consuetudine di sacrificare gli animali agli dei. Il sacerdote, che di fatto era il macellaio, si occupava del sacrificio dell’animale. Le ossa, ritenute sacre perché durature nel tempo, venivano bruciate, mentre il quinto quarto veniva cucinato sul fuoco o nella cenere.
Storico anche il vostro Chef?
Assolutamente si, la cucina della Tenuta à capitanata da Vincenzo Elia , nativo della vicina San Vito dei Normanni, quindi esperto conoscitore dei prodotti del territorio.
Vincenzo collabora con noi da più di 15 anni ed è un convinto sostenitore di una filosofia fondata sulla biodiversità, sulla protezione dell’ambiente, il rispetto delle culture e delle tradizioni locali, fin dall’inizio ha infatti utilizzato quasi esclusivamente prodotti locali a chilometro 0
Sbuca Chef Elia e lo “catturo” per un’intervista “gourmet”
Buongiorno Elia, qual è il suo primo ricordo in cucina?
Le orecchiette che mia mamma Angela preparava il venerdì sera in modo che alla domenica fossero belle croccanti e consistenti e che spesso serviva insieme agli strascinati e cioè dei maccheroncini fatti a mano e tirati con un ferro .
Ho sempre avuto la passione di cucinare. mi ricordo che spesso, prima di andare a scuola mi mettevo i fornelli e mi divertivo a pasticciare e inventare dei piatti.
Il percorso “professionale” ?
La frequentazione della Scuola Alberghiera di Brindisi, seguita dall’ esperienza in Inghilterra e i vent’anni alla Tenuta Moreno, dove mi piace mantenere le tradizioni gastronomiche pugliesi, compreso la nostra famosa focaccia della mattina, che serviamo anche qui, nel breakfast
Qualche piatto di mamma Angela è ancora presente nella sua cucina?
Certo: i fegatini, sono dei “saltimbocca” di circa 4 centimetri, ripieni di frattaglie di agnello tra cui polmone e cuore, insaporiti con prezzemolo fresco, arrostiti alla brace e serviti con patate o, come io preferisco, una bella insalata mista che pulisce la bocca.
Un’altra specialità pugliese doc?
La tiella, un piatto barese, ma diffuso in tutto la Puglia. Ogni città ha la sua variazione, c’è chi ci mette le zucchine, chi i peperoni . Io amo la versione tradizionale con gli ingredienti classici: il riso, le patate, i pomodorini e le cozze del momento, in questo periodo le miniscole e saporite “datterine”
Il suo piatto preferito?
(ride) Non solo il mio… visto che è un best seller da venti anni…
E’ il Risotto Moresco , riso Carnaroli biologico, crostacei e gamberi bianchi freschissimi, zucchine e fiori di zucca.

RISOTTO MORESCO
Ingredienti x 4 persone
:riso Carnaroli 280 gr, zafferano 1 bustina, gamberi bianchi puliti 80 gr, scampi interi 350 gr, zucchine 2 pz, fior di zucca 70 gr, pomodori pelati 250 gr, parmigiano 60 gr, burro 50 gr olio evo q.b.
Procedimento
Pulire gli scampi, tenere il carapace, per fare la bisque di crostacei. In pentolino mettiamo olio mezzo spicchio aglio aggiungere le teste di scampi soffriggere sfumare con vino bianco, e aggiungere i pelati.
Dopo una cottura leggera passare il tutto con il passatutto.
Scaldare il riso con olio evo, cipolla tritata e aglio, sfumare con brandy o vino bianco, portare alla cottura con brodo vegetale, aggiungere una bustina di zafferano, e la bisque di crostacei mantenendo il risotto con un colore rosa,
A 3/4 di cottura, aggiungere il sugo di crostacei, amalgamare il tutto con burro e parmigiano. Mettere in una pentolina olio e mezzo spicchio aglio, soffriggere i crostacei con la zucchina tagliata la parte verde a julienne dalla parte corta, con i fior di zucca tagliati sfumare con vino bianco.
Aggiustare con sale e pepe qb.

Wonderful Apulia. Weekend in Mesagne, a historic village with a “gourmet” heart
Our destination is Mesagne, in the flat area of Upper Salento., an ancient village waiting to be discovered that will hold you many surprises, starting with its unusual (and unique) heart-shaped plant.
Mesagne is an important Messapian center. City with a strategic position halfway on the road that connected the Borgo d’Oria with the port of Brindisi. It is one of the largest cities in the region, not far from the Ionian and Adriatic Seas, so it enjoys a Mediterranean climate that favors agricultural and commercial activities (grapes, vegetables, olives, tobacco, etc.).It rises along the ancient Roman Appian Way and was once an important Messapian center (Messania), of which the necropolis in the historic center have been discovered. Among its streets still today you can discover the remains of ancient civilizations, testified by the presence of the necropolis.
The historic center of Mesagne, gives it a characteristic and truly unique heart shape. it hosts numerous historical monuments that well represent the Apulian Baroque style.

Osteria L’Antico Forno
It was really an ancient oven that Francesco, a young Apulian chef took in hand, renewed “just enough” and set up on a new kitchen where the Apulian tradition meets “gourmet” versions, from pittule, traditional bread balls, to spaghetti with turnip, mussels and bread crumble, pumpkin cream with cod and fried leek. Did your mouth water? ..
Deco sign and mirror, “grandmother’s house” style plates and glasses and vintage furniture. Stand out on the menu: meatballs with sauce, ravioli with sea bream and cavatelli with three tomatoes and legsri.
Popular and crowded by the citizens of Mesagne, even at noon… good sign! Tasty meat and fish dishes, just mention the potato and pumpkin gnocchi, strictly homemade, sautéed with mussels and sole fillets
Braceria Barbanera
Do you want meat? Here is your destination: spectacular chops, bombette (slices of pork stuffed with bacon and caciocavallo cooked on the grill), the traditional turcinieddi, or ghemmarieddhi, call them whatever you want, are mini-rolls made with lamb entrails, cooked in the embers, to eat very hot, authentic witnesses of a traditional local delicacy. Spectacular!
L’incontro
The kindness of Chef Laura, the care of the table, from the hand-decorated plates, to the embroidered napkins, to the kind thoughts that accompany you throughout the meal: from the tastings of focaccia to the bowl of almonds at coffee time. She dominates a 100% Apulian menu, starting with the unsurpassed orecchiette, turnip greens, anchovies and roasted breadcrumbs. More Puglia than that …
SALENTO WINES
In the Mesagne territory we can find noble vines worked, as well as in the cellars, also in an artisanal peasant way, Primitivo, Bianco Verdesca and an appreciated Rosè, a wine with an ancient tradition .
Typical of the Apulian peninsula, it would seem, in fact, that its production dates back to the times when Salento was part of the colonies of Magna Graecia. Here, on a calcareous and clayey soil the Negroamaro vine grows, whose grapes, through sophisticated processing techniques, give life to the rosé wine of Salento., Excellent companion of fish appetizers, risottos and fish dishes, especially if based on tomato, as well as being an ideal combination with fruit-based desserts.

Citation due to the characteristic Negroamaro, a typical native of the area, grown almost exclusively in Puglia and of which there are still old vineyards cultivated with the traditional Apulian sapling technique. It can be vinified alone or used in blends with Malvasia di Brindisi and Lecce, another variety strongly identifying this territory, its history and tradition inherited from grandparents and parents.

The plant choices according to renewable energy: solar, wind and geothermal panels, equipment, furnishings, materials, the food and wine offer, even the vegetable garden, the subject of guided tours and itineraries: everything revolves around the ecological and sustainable aspect .
Here you will discover precious native varieties such as the Fiaschetto tomato from Torre Guaceto, the Regina tomato from Torre Canne and the sweet chilli pepper from Carovigno, essential for masterfully accompanying the fava bean puree.Among the surprises of the estate, a collection of figs with infinite varieties from all over the Mediterranean basin. The estate houses a “five-star” chicken coop for ethical eggs from animals raised outdoors including the Leccese chicken, an endangered breed despite being the absolute protagonist of the decorations on the dishes of the ancient tradition of Apulian ceramics.
At the helm of this great vessel we find Pierangelo Argentieri, President of Federalberghi Brindis and promoter of widespread exhibitions as well as at Hortus Puglia which in May and October brings together fruit and vegetable producers from all parts of Italy in Ostuni for an event that promotes the public green, the vegetable garden and sustainability. For more than 21 years, Pierangelo has been present on the estate, thus continuing the family tradition.
I met him for a short interview.
Buongiorno Pierangelo, how was Tenuta Moreno born?
From a small provincial restaurant called “the Taverna Del Cacciatore” set mainly on game. Subsequently, fish and vegetables took over the menu up to a contemporary cuisine, attentive to sustainability, non-waste and contrary to the use of plastic. A speech that began in 2013, continued with our presence at Expo 2015 as representatives of Puglia in the restaurant of the Italy pavilion where each month they presented a different gastronomic offer.
We are a reality that is a garrison of this part of the territory. also as regards the hotel structure which, thanks to the numerous rooms, allows various events, weddings, conventions, dinners and banquets, often simultaneously.
Any New project?
Our business continues in Brindisi we have recently inaugurated the Hotel and the Palazzo Virgilio Restaurant, while in the vicinity of San Pancrazio Salentino, we have the Masseria Malvindi, a five-star hotel with 14 rooms near the ancient Roman baths.
Many “gourmet” visitors, specially foregneirs, are interested in typical local cooking lessons, do you organize them?
Of course, our facilities offer cooking classes, where you learn the techniques to make moxxarella, taralli and orecchiette, which will then be enjoyed with tomato sauce and chops or aubergines for those who prefer a vegetarian dressing.Any “gourmet” excursions?
We promote the area with visits to places where it is still possible to find traditional restaurants, such as in the towns of Ostuni, Ceglie Messapica and San Michele Salentino, where focaccias are baked from primordial stone ovens and where traditional cooking is still done, for example the meat “in the stove” and historical recipes that use the entrails are preserved.
Historical dishes, then?
Of course, rituals that have remote origins, when, especially in ancient Greece, there was the custom of sacrificing animals to the gods. The priest, who was in fact the butcher, took care of the sacrifice of the animal. The bones, considered sacred because they last over time, were burned, while the fifth quarter was cooked over the fire or in ashes.
Is your Chef historic too?
Absolutely yes, the cuisine of the Tenuta is led by Vincenzo Elia, a native of nearby San Vito dei Normanni, therefore an expert in local products.
Vincenzo has been collaborating with us for more than 15 years and is a staunch supporter of a philosophy based on biodiversity, environmental protection, respect for local cultures and traditions, in fact from the very beginning he has used almost exclusively local products at kilometer 0
Buongiorno Vincenzo, what is your earliest memory in the kitchen?
The orecchiette that my mother Angela prepared on Friday evening so that on Sunday they were crunchy and consistent and that she often served together with strascinati, that is macaroncini made by hand and pulled with an iron.
I’ve always had a passion for cooking. I remember that often, before going to school, I would put the stove in place and have fun messing around and inventing dishes.
What about your “professional” path?
Attending the Culinary School of Brindisi, followed by the experience in England and twenty years at Tenuta Moreno, where I like to maintain the Apulian gastronomic traditions, including our famous focaccia in the morning, which we also serve here, in the breakfast.
Are there any Mamma Angela’s dish still present in your today’ s cooking?
Of course: for example, the fegatini, kind of “saltimbocca” of about 4 centimeters, stuffed with lamb offal including lung and heart, flavored with fresh parsley, roasted on the grill and served with potatoes or, as I prefer, a nice mixed salad that cleans the mouth.
Tiella, a dish from Bari, but widespread throughout Puglia. Each city has its own variation, there are those who put courgettes in it, orhers put peppers. I love the traditional version with classic ingredients: rice, potatoes, cherry tomatoes and mussels of the moment, in this period the miniscole and tasty “datterine”
Your favorite dish?
(laughs) Not only mine … since it has been a best seller for twenty years …
It is the Risotto Moresco, organic Carnaroli rice, fresh white shellfish and prawns, courgettes and courgette flowers.

RISOTTO MORESCO
Ingredients for 4 people
: Carnaroli rice 280 gr, saffron 1 sachet, clean white prawns 80 gr, whole scampi 350 gr, zucchini 2 pcs, courgette flower 70 gr, peeled tomatoes 250 gr, parmesan 60 gr, butter 50 gr extra virgin olive oil to taste.
Method
Clean the prawns, keep the shell, to make the crustacean bisque. In a saucepan, put half a clove of garlic in oil, add the prawn heads, sauté with white wine, and add the peeled tomatoes.
After a light cooking pass it all with the strainer.
Heat the rice with extra virgin olive oil, chopped onion and garlic, deglaze with brandy or white wine, cook with vegetable broth, add a sachet of saffron, and the shellfish bisque keeping the risotto with a pink color,
3/4 of the way through cooking, add the shellfish sauce, mix everything with butter and Parmesan. Put oil and half a clove of garlic in a saucepan, fry the crustaceans with the courgette cut the green part into julienne from the short part, with the cut courgette flowers blend with white wine.
Season with salt and pepper to taste.
