Pescara: il ‘divo’, i trabocchi e la colomba ‘gourmet’ di Stefania

Pescara,
chiamata anticamente “Piscaria”, per la pescosità del suo mare, è una grande città portuale e un centro di cantieristica, di industria tessile e, naturalmente, di pesca. Oltre a questo, la città è una rinomata località balneare le cui spiagge vantano più di 10 km. Sono perfettamente attrezzate e offrono numerose opportunità di relax e comfort.
Pescara è oggi definita la “Città dei due Ponti”il Ponte del Mare, lungo  466,  e più grande ponte ciclo-pedonale d’Italia e Il Ponte Ennio Flaiano, intitolato al grande scrittore pescarese.

Il ‘divo’ Gabriele

Durante la seconda guerra mondiale, quasi tutta la città era in rovina. La maggior parte dei suoi monumenti storici andò perduta per sempre in questo periodo. Tra gli edifici distrutti c’era una casa di Gabriele D’Annunzio, dove viveva sua madre.

Dopo la guerra, il poeta decise di restaurare l’edificio. Nel 1963 qui fu aperto un museo che, in una raffinata atmosfera, raccoglie interessanti testimonianze della sua vita e del suo lavoro.

La cucina abruzzese è ricca, varia e tutta da scoprire, quindi niente di meglio che chiedere a una esperta in gastronomia locale: Stefania Peduzzi che, oltre che conoscere e promuovere la regione del territorio, è al timone di Rustichella d’Abruzzo, rinomato pastificio artigianale che esporta in tutto il mondo.

Buongiorno Stefania, un consiglio per un weekend in Abruzzo?

Abito nella provincia di Pescara e tutt’intorno ci sono luoghi interessanti e località poco conosciute. Tanta bellezza e tanta storia.  Sto studiando e scoprendo le antiche abbazie medioevali di queste zone montane, strutture storicamente importanti perchè un tempo controllavano il passaggio dall’ Abruzzo verso il Tirreno. Tra le mie preferite, la splendida San Giovanni in Venere, San Clemente a Casauria e San Bartolomeo, poco conosciuta e meno visitata, a Carpinedo della Nora. Altra visita storica da non perdere è l’antica Abbazia del Vescovo a Penne, un borgo davvero incantevol

Per un lunch domenicale?

Le nostre colline, i nostri borghi sono meravigliosi, e offrono realtà culinarie tutte da scoprire, e poi punterei al fascino del mare. A Pescara, nella zona del porto canale scoprirete delle insolite palafitte dalle lunghe braccia che sostengono le reti da pesca: sono i  trabocchi, ristoranti sospesi sul mare in cui gustare cucina marinara. I più suggestivi a poca distanza dalla città, sulla costa da Ortona fino a Vasto, passando per San Vito Chietino, Rocca San Giovanni, Fossacesia e Torino di Sangro.

Rustichella d’Abruzzo sforna ogni anno, proprio in questo periodo, la sua famosa colomba pasquale, ce la racconta?

E’ fatta con “pasta madre”, un impasto naturale e soffice ottenuto attraverso la lievitazione di acqua e farina e poi messo a riiposare in un ambiente controllato, per ottenere una naturale lievitazione. Questa continua rigenerazione, conferisce alla colomba una fragranza e leggerezza uniche...

Pasqua è vicina: un’idea ‘gourmet’ per servire la colomba?

Ho pensato a una colomba gourmet, un po’ ‘diversa,  arricchita da una crema al mascarpone e guarnita di fragole. Un piatto semplice, adatto a fine pranzo e che può essere preparato al momento. Felice Pasqua a tutti voi!

Ho già l’acquolina in bocca… Che vino accoppierebbe?

Per restare in Abruzzo, sceglierei uno storico vino da dessert: la ratafià abruzzese, un rosolio tipico, antico e nobile, celebrato anche da Gabriele D’Annunzio che lo definì “sangue morlacco”. E’ un vino che unisce la forza del  Montepulciano D.O.P. e l’aspro profumo delle amarene. Ottima scelta per accompagnare i dessert a fine pasto.

La ratafià più celebre è quella della storica Distilleria Toro, fondata nel lontano 1817 e famosa per la sua rinomata Centerba e i distillati ricavati dalle erbe aromatiche e salutari che crescono sul monte Morrone che fa da sfondo all’altopiano su cui sorge Tocco da Casauria, estremo lembo della provincia di Pescara.

COLOMBA FARCITA CON CREMA AL MASCARPONE E FRAGOLE

Una colomba pasquale ‘gourmet’

Ingredienti per 6 persone
3 uova,
3 cucchiai di zucchero
1 cucchiaio e mezzo di Maizena
400 ml di latte
Estratto di vaniglia
250 g di mascarpone,
1 bustina di zucchero a velo
6 fragole
Preparazione
Sbattere i tuorli con lo zucchero e la maizena fino a rendere il composto spumoso. Contemporaneamente porre in una pentola il latte con l’estratto di vaniglia.
Portare a ebollizione, versare il composto, girare finchè la crema diventi densa. Al primo bollore spegnere e lasciare raffreddare.
In una terrina unite alla crema 125 g di mascarpone e lasciare in frigo a riposare. Prendere le fragole fresche, tagliarle per lunghezza come da foto, una per ogni commensale.
Tagliare la colomba a fette e con una sac a poche apporre la crema sulla fetta e infine le fragole.
Completare con una spolverata di zucchero a velo.

Gabriele D’annunzio 
During the Second World War, almost the entire city was in ruins. Most of its historical monuments were lost forever in this period. Among the destroyed buildings was a house of italian poet Gabriele D’Annunzio, where his mother lived.
After the war, the poet decided to restore the building. In 1963 a museum was opened here which, in a refined atmosphere, collects interesting testimonies of his life and his work. the house of Gabriele D’Annunzio

Gastronomic paradise

Hello Stefania, any advice for a weekend in Abruzzo?
I live in the province of Pescara and all around there are interesting places and little known places. So much beauty and so much history. I am studying and discovering the ancient medieval abbeys of these mountain areas, historically important structures because they once controlled the passage from Abruzzo to the Tyrrhenian Sea. Among my favorites, the splendid San Giovanni in Venere, San Clemente a Casauria and San Bartolomeo, little known and less visited, in Carpinedo della Nora. Another historical visit not to be missed is the ancient Bishop’s Abbey in Penne, a truly enchanting village, San Giovanni in Venere, San Clemente a Casauria and San Bartolomeo,
Where to go for a Sunday lunch?

Our hills, our villages are wonderful, and offer culinary realities to be discovered, and then I would aim for the charm of the sea. In Pescara, in the canal port area, you will discover unusual stilt houses with long arms that support the fishing nets: They are called trabocchi, restaurants suspended over the sea where you can enjoy seafood cuisine. The most suggestive are not far from the city, on the coast from Ortona to Vasto, passing through San Vito Chietino, Rocca San Giovanni, Fossacesia and Torino di Sangro. My fav are Cavalluccio and  Fornace

Rustichella d’Abruzzo produces its famous Easter COLOMBA every year during this period, can you tell us about it?

It is made with “sourdough”, a natural and soft dough obtained through the leavening of water and flour and then left to rest in a controlled environment, to obtain a natural leavening. This continuous regeneration gives the dove a unique fragrance and lightness …
Easter is near: a ‘gourmet’ idea to serve the COLOMBA?
I thought of a colomba, with a twist, enriched with a mascarpone cream and garnished with strawberries. A simple dish, suitable for the end of lunch and which can be prepared at the moment. Happy Easter to you all!

My mouth is watering already … What wine would you pair?
To stay in Abruzzo, I would choose a historic dessert wine: the Abruzzese ratafià, a typical, ancient and noble rosolio, also celebrated by Gabriele D’Annunzio. It combines the strength of Montepulciano D.O.P. and the sour scent of black cherries. Excellent choice to accompany desserts at the end of a meal. The most famous ratafià is that of the historic Toro Distillery, founded in 1817 and famous for its renowned Centerba and the distillates made from aromatic and healthy herbs that grow on Mount Morrone which is the backdrop to the plateau on which Tocco da Casauria stands, extreme strip of the province of Pescara.

COLOMBA FILLED WITH MASCARPONE CREAM AND STRAWBERRIES

Una colomba pasquale un po’ ‘diversa,

ingredients for 6 people
3 eggs, 3 tablespoons of sugar 1 and a half tablespoons of cornstarch 400 ml of milk Vanilla extract 250 g of mascarpone, 1 sachet of powdered sugar 6 strawberries
Preparation
Beat the egg yolks with the sugar and cornstarch until the mixture is fluffy. At the same time, place the milk with the vanilla extract in a saucepan. Bring to a boil, pour in the mixture, turn until the cream becomes thick. At the first boil turn off and let cool. In a bowl, add 125 g of mascarpone cream to the cream and leave in the fridge to rest. Take the fresh strawberries, cut them lengthwise as shown in the photo, one for each diner. Cut the dove into slices and with a pastry bag put the cream on the slice and finally the strawberries. Complete with a sprinkling of powdered sugar.
