Sfida in cucina: stelle Michelin e ricette elaborate contro addominali mozzafiato e una faccia da Hollywood… Chi vince ?
Per me la risposta è semplice: vince il cibo sano e un piatto saporito fatto con ingredienti selezionati e intelligenti scelte organiche. In più, se ai fornelli c’è Franco Noriega, definito dalla stampa internazionale ‘lo chef più sexy del mondo’,  il gioco è fatto!

Franco Noriega, peruviano di origine, ha sfilato nelle passerelle di Burberry e Dolce & Gabbana, è popolarissimo su YouTube grazie al suo show “Chef Nudo” ed è richiestissimo dai più popolari talk show americani, come “Ellen”, Noriega è il fondatore e ristoratore di BABY BRASA, gruppo di ristoranti organici e servizi di catering con sede a New York.

Baby Brasa si ispira alle classiche pollerías peruviane e si concentra sul servire pasti sani e di provenienza responsabile per una cucina peruviana contemporanea, piatti fusion, cocktail d’autore e una ‘caliente’ musica live.

Dove ti piace passare un weekend libero?
Amo il sole, il mare, la spiaggia, le palme, quindi le mie destinazioni preferite sono Miami, che è a poche ore di volo da NY oppure Rio do Janeiro, per un weekend lungo: viaggio di notte, e quando arrivo alla mattina… sono già in spiaggia!

Come modello, hai viaggiato tanto?
In tutto il mondo, Italia compresa, naturalmente. Mi piace scoprire nuovi posti, e nuove culture, Sono un gran curioso e aper a nuove sensazioni. Ero in Messico a Tulum, in uno dei nostri Hotels Casa Pueblo, dove mi hanno servito un chilcano, tradizionale drink peruviano con ginger ale e pisco, tipico brandy prodotto in Perù che però lì avevano sostituito con il mezcal messicano. Ottimo, adottato!

Il tuo piatto preferito della cucina italiana?
La pasta al ragù, una vera delizia, ma anche la semplicissima aglio, olio e peperoncino…
il tuo primo ricordo in cucina ?
La cucina era un po’ il centro della casa.  Ero spesso tra i fornelli con nonna Delfina, lei cucinava, io curiosavo dovunque e l’aiutavo a pelare le patate. Provengo da una famiglia di ristoratori, i miei hanno sempre avuto locali in Perù e e sono cresciuto con un concetto del cibo concentrato non solo sul gusto e sulla bellezza, ma anche su cosa potesse significare in termini di lavoro, di carriera e di business.

Un business che, a causa del covid, ora sta attraversando una brutta crisi, anche a New York. Cosa dici a proposito?
Ti rispondo con un messaggio di speranza. In cinese la parola ‘crisi’ è tradotta in 危机 (Wei Ji), composta da due caratteri. Il primo è Wei, che significa ‘pericolo’, il secondo è Ji, che significa ‘opportunità’. È giunto il momento di pensare a quale sarà il nostro prossimo passo.
Il risorante è chiuso, però i nostri clienti rimangono affezionati, anche Sse solo per il ‘to go ‘.

Molte consegne a domicilio?
Si, devo dire che a New York il delivery è popolarissimo da anni, qui la gente cucina poco e preferisce farsi portare la cena a casa. Con lo slogan ‘Baby, we deliver’ ci siamo affidati a ottimi servizi di consegna, come Caviar, Seamless, Grubhub, che ci garantiscono recapiti rapidi e professionali in tutte le zone di Manhattan.

Tu cucini a casa?
Mangio quasi sempre nel mio ristorante, dove so che il cibo è fresco, naturale, pulito, ben curato, senza grassi o additivi poco salutari. Per esempio, i miei chicken wraps on greens, involtini di pollo, serviti come dei burritos messicani, ma in una foglia di lattuga, freschi, sani e super semplici da realizzare.

Ti consideri uno chef green ?
Non amo classificarmi nè amo qualunque tipo di definizione: sono un paladino del cibo sano e di ingredienti organici e sono un sostenitore della politica no waste per ridurre al minimo lo spreco in cucina. L’impegno di prendersi cura dell’ambiente è essenziale

Per tenerti in forma segui una dieta speciale?
Si, posso dire che la mia dieta la faccio qui, semplicemente mangiando… e ballando: al weekend ospitiamo una band che suona musica latina ‘muy caliente’: cumbia, bachata, reggaeton, salsa, merengue… impossibile restare fermi…

Cosa c’è sempre nel tuo frigo?
Tanto verde: verdure, piselli e uova per il breakfast.
Tutto sanissimo dunque…
Si, anche se devo confessare che ogni tanto mi lascio tentare da qualche junk food. Un paio di giorni fa a Miami sono passato davanti un KFC e non ho saputo resistere a un piatto di pollo fritto. (ride) Nessuno è perfetto….

La ricetta più buona del mondo?
(ride) Penserai che voglio fare della promozione ma, credimi, non è così…
Il roasted baby chicken del mio ristorante è davvero il migliore che io abbia mai mangiato…e non sono il solo: ho molti amici chef che la pensano come me e quando hanno del tempo libero vengono qui a gustarsi il mio polletto.

Un piatto insuperabile? 
Non ho dubbi: il mitico risotto allo zafferano di mia nonna Natalina, originaria prorio di Milano.
Guidi?
Solo se sono in viaggio, qui a New York giro in bici o vado di skateboard.

il cibo più sexy?
Trovo piuttosto erotico un piatto con ostriche e avocado, eh si, devo confessarti che su di me l’avocado ha un effetto definitivamente afrodisiaco…

La ricetta di Franco Noriega
Chicken wraps on greens – Involtini di pollo su verdure
• Petti di pollo senza pelle disossati da  230 gr
• 1/2 tazza di maionese
• 1/4 tazza di parmigiano grattugiato
• 2 tazze di lattuga romana tritata
• 2 pomodori, ognuno tagliato in 6 fette
• 16 foglie di basilico fresco
• 1/2 tazza di crostini di pane, leggermente tritati
• 1 mango
• 1 grande lattuga intera
Preparazione
In una padella da 25 cm sciogli il burro a fuoco medio-basso.
Aggiungi il pollo e cuocilo, girandolo solo una volta, per 13-18 minuti o fino a quando la temperatura interna del pollo raggiunge i 75° e  entrambi i lati sono dorati.
Punzecchiali con una forbice per far uscire tutto il liquido.
Rimuovi dalla padella; tagliato a strisce sottili.
Mescola maionese e parmigiano in una ciotola. Distribuisci su ogni tortilla.
Usa la lattuga come se fosse una tortilla, quindi aggiungi il pollo, il pomodoro, il basilico e i crostini.
Avvolgi e crea un involtino, simile un burrito messicano.

A duel in the kitchen: Michelin stars and elaborate recipes versus breathtaking abs and a Hollywood ‘superstar like’ face … Who is the winner?
Here’s my answer: the winner is a healthy cuisine, tasty dishes, selected ingredients and intelligent organic choices . In addition to that, if ‘the sexiest chef in the world’ Franco Noriega is in the kitchen, well, that’s it!
Noriega: has been modeling on the Burberry and Dolce & Gabbana catwalks, his YouTube show “Naked Chef” is a hit, he has been featured in popular American talk shows, such as” Ellen “.
Noriega is the founder and restaurateur of BABY BRASA, a group of organic restaurants and catering services based in New York. Baby Brasa is inspired by the classic Peruvian pollerías and focuses on serving healthy and responsibly sourced meals for contemporary Peruvian cuisine, fusion dishes, signature cocktails and ‘hot’ live music.

Where do you like to spend a free weekend?
I love the sun, the sea, the beach, the palm trees, so my favorite destinations are Miami, which is a few hours away from NY or Rio do Janeiro, for a long weekend: I travel at night, and when I arrive in the morning. .. I’m already on the beach!

As a model, have you traveled a lot?
All over the world, including Italy, of course. I like to discover new places, and new cultures, I am very curious and open to new sensations. I was in Mexico in Tulum, in one of our Casa Pueblos Hotels, where they served me a chilcano, a traditional Peruvian drink with ginger ale and pisco, a typical brandy produced in Peru which, however, they had replaced there with the local mezcal. Excellent, adopted!

Your favorite dish of Italian cuisine?
Pasta with meat sauce, a real delight, but also the simple aglio, olio ,peperoncino (garlic, oil and chilli pepper)
Your first memory in the kitchen?
The kitchen was somewhat the center of the house. I was often there with Grandma Delfina, she cooked, I was snooping everywhere and I helped her to peel the potatoes. I come from a family of restaurateurs who always had restaurants in Peru and I grew up with a concept of food focused not only on taste and beauty, but also on what it could mean in terms of work, career and business.
A business that, due to the covid, is now going through a bad crisis, even in New York. What do you say about it?
I ‘d like to answer with a message of hope. In Chinese the word ‘crisis’ is translated into 危机 (Wei Ji), consisting of two characters. The first is Wei, which means ‘danger’, the second is Ji, which means ‘opportunity’.The time has come to think about what our next step will be.
The restarant is closed now, but our costumers remain faithful, at list for pick up or delivery.

I have to say that delivery is very popular in New York, people here rarely cook  at home and they prefer to have dinner brought home. With the slogan ‘Baby, we deliver’ we use several excellent delivery services, such as Caviar, Seamless, Grubhub, all of them guarantee rapid and professional deliveries in all areas of Manhattan.

Do you cook at home?
Rarely, I prefer to eat in my restaurant, where I know that the food is fresh, natural, clean, well cured, without fat or unhealthy additives. For example, my ‘chicken wraps on greens burrito style’ served in a lettuce leaf, fresh, healthy and super simple to make.

Do you consider yourself a ‘green’ chef?
I don’t like to classify myself, neither any type of definition: I am a big fan of healthy food, organic ingredients and I support the ‘no waste’ policy to minimize waste in the kitchen.

You are definetely fit. Do you follow a special diet ?
My diet is here: eating healthy in my restaurant and… dancing.
On weekends we host a band that plays some “muy caliente” Latin music : cumbia, bachata, reggaeton, salsa, merengue. Let’s dance!

What’s always in your fridge?
A lot of greens, vegetables, peas and eggs for breakfast.
Very healthy ...
Yes, although I must confess that sometimes I let myself be tempted by some junk food. A couple of days ago in Miami I passed by a KFC and I couldn’t resist a plate of fried chicken. (smiles) Please forginve me , but hey ‘Nobody is perfect? ….
The best recipe in the world?
Well, It may looks that I want to do some promotion… but. believe me, it’s not like that … ‘Baby Brasa roasted chicken’ is really the best I’ve ever eaten … and I’m not the only one, There are many friends chef who think the same and when they have some free time, they like to come here to enjoy my chicken.

A dish to remember?
I have no doubts: the legendary ‘saffron risotto’  cooked by my grandmother Natalina, originally from Milan.
Do you drive?
Only if I’m traveling, In New York I ride a bike or a skateboard.

The sexiest food?
I find a plate with oysters and avocado rather erotic Yes, I must confess that avocado has a definitely aphrodisiac effect on me …
Franco Noriega’s recipe
Chicken wraps on greens – Involtini di pollo su verdure
Ingredients
  • 1/2 pound boneless skinless chicken breasts 
  • 1/2 cup mayonnaise or salad dressing 
  • 1/4 cup shredded Parmesan cheese 
  • 2 cups shredded romaine lettuce 
  • Roma tomatoes, each cut into 6 slices 
  • 16 fresh basil leaves 
  • 1/2 cup Italian-flavored croutons, slightly crushed 
  • 1 Mango
  • 1 big whole lettuce 

Preparation

  1. Melt butter in 10-inch skillet over medium-low heat until sizzling.
  2. Add chicken; cook, turning once, 13-18 minutes or until internal temperature of chicken reaches 165⁰F, is golden brown on both sides and juices run clear when pierced with a fork. Remove from skillet; cut into strips.
  3. Mix mayonnaise and Parmesan cheese in bowl. Spread onto each tortilla. Use the lettuce like tortilla, then add the chicken, tomato, basil and croutons.
