RAVENNA: weekend “gourmet” nella Capitale dei Mosaico. Mosaicista anche tu?

Ami la storia e l’arte? Vuoi scoprire la buona cucina regionale italiana? Sei un amante del mosaico? Vorresti creare un ‘tuo’ mosaico?
Segna in agenda: “Weekend a Ravenna,” per scoprire una tra le più belle città del mondo, sognare davanti ai suoi mosaici, imparare questa meravigliosa forma d’arte e gustare la schietta cucina romagnola.
Tra realtà, leggende e segreti…

Ravenna è un luogo con un passato davvero prestigioso, tre volte capitale: dell’Impero Romano d’Occidente, del regno di Teodorico e dell’Impero bizantino in Europa, fino all’VIII secolo d.C. Durante questo periodo di ricchezza e prestigio, furono costruiti chiese e mausolei, splendidamente decorati con meravigliosi mosaici, sicuramente i più scintillanti e famosi del mondo, così preziosi da  essere stati riconosciuti Patrimonio dell’Umanità dall’UNESCO nel 1996.

È considerata uno dei più importanti esempi di arte paleocristiana e rappresenta un perfetto incontro tra tradizioni orientali e occidentali. La vera meraviglia sono gli abbaglianti mosaici bizantini che decorano il presbiterio e il coro.
Riccamente vestita, trionfa l’Imperatrice Teodora donna dal passato ” leggero”. La sua bellezza sfolgorante conquistò l’imperatore Giustiniano I, assieme al quale regnò, in parte collaborando nella gestione del potere. Chi la onora per le numerose opere benefiche, chi invece ne vede esclusivamente il lato negativo, descrivendone la giovinezza dissoluta come attrice del circo e prostituta, prima della sua conversione e del matrimonio,

E’ davvero emozionante trovarsi a tu per tu con la bellissima sovrana di Ravenna. Beh, anche Teodora aveva  i suoi segreti di bellezza, perlomeno così sostiene l’ Erboristeria in Via Salara che vende appunto i Segreti di Teodora.

Mausoleo dell’Imperatrice Galla Placidia
Varcate l’ingresso e guardate in alto, entrerete in un mondo magico dal cielo blu trapuntato da stelle dorate. Le preziose tessere sono in oro e lapislazzolo. Davvero mozzafiato.
Si racconta che il compositore Cole Porter, dopo una visita a questo edificio,  fosse stato ispirato a scrivere la canzone“ Night and Day ”, forse la sua composizione più conosciuta.

Basilica di San Giovanni Evangelista
Uno dei miei luoghi preferiti. Non solo per i teneri mosaici pavimentali, vagamente naif, che sembrano fatti da mani di giovani studenti, ma anche perchè c’è una misteriosa leggenda che coinvolge proprio l’imperatrice.

Si racconta infatti La sera prima della consacrazione della Basilica dedicata a San Giovanni Evangelista, Galla Placidia vide apparire una figura luminosa. Era proprio San Giovanni! Galla si prostrò ai suoi piedi e quando la figura sparì, le restò in mano il sandalo del santo. L’episodio è raffigurato sul portale medievale, antistante la Basilica, location perfetta per una foto-souvenir…

Basilica di Sant’Apollinare Nuovo
Poco distante dal centro, troverete un’ altra meraviglia, eretta nel 505 e dichiarata nel Patrimonio Mondiale Unesco nel 1996. Le pareti nella navata centrale sono completamente decorate con mosaici dorati che rappresentano il più antico ciclo musivo del Nuovo Testamento, dove le figure umane sono quasi completamente assenti, a significare che tutto è simbolo. Il prato verdeggiante, costellato di fiori, sassi, cespugli, uccelli, si distende senza profondità prospettica, privo di vita concreta. Il contrasto tra il verde e l’oro crea un’atmosfera che ipnotizza lo spettatore.

Molti artisti e scrittori famosi si sono innamorati di Ravenna. Nomi come George Byron, Gustav Klimt, Oscar Wilde e Dante Alighieri, l’autore della Divina Commedia e padre della lingua italiana, che ha trascorso gli ultimi tre anni della sua vita a Ravenna.

Nella “zona di silenzio dedicata a Dante” potrete visitare la Tomba di Dante, situata in un piccolo tempio neoclassico risalente al 18 ° secolo, proprio accanto alla Basilica di San Francesco che al suo interno nasconde un bellissimo segreto: una finestrella sotterranea che offre una favolosa vista sulla Cripta dai pavimenti mosaicati.

Si trova sotto il livello del mare e perciò piena d’acqua e pesciolini rossi. Un ‘mmagine che non dimenticherete facilmente.
I segreti della tomba di Dante
Ma qual è la storia della sua sepoltura? Tra leggende e verità, circolano moltre storie sui travagliati viaggi che fece la salma del Poeta, letteralmmente rubata da frati francescani, che in seguito tolsero le ossa dall’urna per nasconderlle in una cassetta murata nell’attiguo oratorio. Nessuno ne seppe più nulla, finchè nel 1865 un operaio trovò per caso una rustica cassetta di legno decorata con la scritta ‘Ossa di Dante’.Oggi è conservata nel Museo di Dante che propone un viaggio lungo otto stanze, attraverso le opere e i giorni, la vita e la memoria del poeta più conosciuto al mondo. Un percorso innovativo e immersivo, tra storia e immagini, per fare esperienza e conoscenza dell’avventura umana, della vicenda artistica, della Commedia e della successiva fortuna di Dante.
Un museo creato per un pubblico variegato e anche internazionale, pensato per creare un’esperienza emozionale e, al contempo, cognitiva, grazie a un uso ragionato dell’interattività e della multimedialità e una presenza significativa di reperti e oggetti di grande suggestione,

MAR Museo d’Arte di Ravenna
Ospitato nella Loggetta Lombardesca, il monastero del XVI secolo dell’adiacente Abbazia di Santa Maria a Porto, come parte di un insieme più ampio, il Museo d’Arte di Ravenna ospita mostre periodiche con artisti e pittori di fama nazionale e internazionale.

Fino al 14 gennaio 2024 spiterà BURRIRAVENNAORO, un’importante mostra dedicata ad Alberto Burri, artista di fama mondiale, che negli anni Ottanta, aveva avviato con Ravenna un intenso rapporto artistico, segnato dalla concezione di alcuni cicli di opere ispirate proprio alla storia e alla cultura artistica della città.

 Guidarello: le labbra più sexy del Rinascimento.
Sempre al MAR, sosta d’obbligo alla scultura del leggendario  (e bellissimo) Guidarello Guidarelli,  Quest’opera cinquecentesca è sempre stata oggetto di ammirazione per la bellezza del suo viso e sopratutto delle sue labbra…Si diceva infatti che se una donna avesse baciato le sue labbra, si sarebbe maritata entro l’anno. Scoppiò una tale ‘bacio-mania’ che la lastra originale dovette essere sostituita con una copia. Oggi è tornata l’originale, ma è severamente vietato avvicinarsi, quindi care zitelle… alla larga!

DOPO QUESTA “FULL IMMERSION MOSAICALE”… VI E’ VENUTA FAME?

La cucina di Ravenna offre gustosissimi piatti tipici, tradizionali e spesso di origine “povera” dove nulla si spreca e nulla si butta. Nel gioioso periodo delle Vendemmia, si prepara il sugol, un budino dalle origini antiche, composto d’uva freschissimo cotto insieme alla farina. In un weekend ravennate non possono mancare i cappelletti, rigorosamente farciti con squacquerone e parmigiano , in brodo, al sugo di carne o al burro versato e salvia.

Di sua Maestà Cappelletto non mancano le rivisitazioni, fino a diventare  “e Caplét”, cioccolatino artigianale creato dal ristorante Al Cairoli, come tributo al mito della tavola romagnola.

Torniamo alla tradizione. I due top lievitati della gastronomia locale sono  il crescione e la mitica piadina. Sembrano uguali ma in effetti Il crescione rimane più sottile e viene successivamente farcito, poi ripiegato su sé stesso a mezzaluna e serrato sui bordi coi rebbi di una forchetta, mentre la piadina tipica di Ravenna presenta una sfoglia più sostenuta e viene farcita dopo la cottura.

Vi volete togliere lo sfizio di fare la ” vostra “piadina?
Al primo piano dello spettacolare Mercato Coperto potrete lettermente “mettere le mani in pasta” e realizzare una piadina, istruiti da autentiche azdore locali che, nel corso di una lezione di circa un’ora, vi procureranno tutti gli ingredienti e vi guideranno dall’impasto fino alla farcitura. Buon appetito!

Tra le carni tipiche, spicca il castrato, ricavato dal maschio ovino, marinato con sale, aglio e rosmarino, cotto sulla brace o preparato in umido con lo scalogno. Io l’ho provato da Ca de Ven, servito con verdure e le immancabili patate al forno

Il piatto “povero” più tradizionale?
Ecco la spoja lorda. significa letteralmente “sfoglia sporca” ed è un piatto di recupero che nasce dagli scarti della preparazione dei cappelletti ripieni e come metodo per riutilizzare la sfoglia e il ripieno avanzati. La sfoglia all’uovo, infatti, viene solo leggermente sporcata del ripieno residuo, creando dei piccoli raviolini da cuocere in brodo.

SPOJA LORDA

Ingredienti
Per la sfoglia:
5 uova, 500 g. di farina per sfoglia
Per il ripieno:
250 g. di squacquerone, 200 g. di parmigiano, 1 uovo, 1 pizzico di sale, 1 cucchiaino di noce moscata grattugiata, 1,5 l di brodo di carne
Procedimento
Disponete la farina a fontana sul tagliere, rompete al centro le uova, impastate il tutto fino a ottenere un impasto sodo e liscio e lasciatelo riposare per 30 minuti coperto da un piatto.
In una terrina mescolate lo squacquerone con il parmigiano grattugiato, una presa di sale, l’uovo e la noce moscata, Amalgamate bene. Con il mattarello tirate una sfoglia sottile e spalmate il composto su metà della sfoglia, copritela con l’altra metà e passate sopra il mattarello, pressando bene. Con la rotella dentata ricavate tanti quadratini di 1 cm, tagliate piano la sfoglia. Portate a bollore il brodo e cuocetevi la minestra imbottita per alcuni minuti. Servitela ben calda

Buone, ruspanti, generose, non troppo costose, con menù di tipica cucina del territorio .
Mangiare nelle osterie di Ravenna significa assaporare la Romagna nel piatto. È un’esperienza di riscoperta dei sapori antichi. dove i piatti sono tradizione e autenticità di una di terra, generosa e schietta come i suoi abitanti.

Sorpresa finale
Un ex magazzino industriale restaurato dal concetto nuovo e un menu alternativo che ci porta viaggio verso una cucina un po’ tex mex. un po’ americana, un po’ esotica: una miriade di hamburger di carne scelta, pizze gourmet servite alla pala, insolite insalate eccetera…
Siamo al  Darsenale Brew-pub, il primo brew-pub della darsena di Ravenna, birrificio artigianale, con l’impianto di produzione a vista della Birra Bizantina oltre alla scelta di molte altre etichette artigianali.

Ravenna is a place with a truly prestigious past, capital three times: of the Western Roman Empire, of the reign of Theodoric and of the Byzantine Empire in Europe, until the eighth century AD. During this period of wealth and prestige, churches and mausoleums were built, splendidly decorated with marvelous mosaics, certainly the most glittering and famous in the world, so precious that they were recognized as a UNESCO World Heritage Site in 1996.

It is considered one of the most important examples of early Christian art and represents a perfect meeting between Eastern and Western traditions. The real wonder are the dazzling Byzantine mosaics that decorate the chancel and choir.
Richly dressed, the Empress Theodora, a woman with a “light” past, triumphs. Her dazzling beauty conquered the emperor Justinian I, with whom he reigned, partly collaborating in the management of power. Those who honor her for her many charitable works, those who instead of her see only the negative side of her, describing her dissolute youth as a circus actress and prostitute, before her conversion and her marriage, It is truly exciting to be face to face with the beautiful sovereign of Ravenna. Well, Teodora also had her beauty secrets, at least that’s what the Herbalist shop in Via Salara claims, which sells Theodora’s Secrets.

Cross the entrance and look up, you will enter a magical world with a blue sky quilted with golden stars. The precious tesserae are in gold and lapis lazuli. Truly breathtaking.
It is said that the composer Cole Porter, after a visit to this building, was inspired to write the song “Night and Day”, perhaps his best known composition of him.

One of my favorite places. Not only for the soft, vaguely naive floor mosaics that seem to have been made by the hands of young students, but also because there is a mysterious legend involving the empress.
In fact, it is said that on the evening before the consecration of the Basilica dedicated to San Giovanni Evangelista, Galla Placidia saw a luminous figure appear. It was really San Giovanni! Galla prostrated himself at her feet and when her figure disappeared, the saint’s sandal remained in her hand. The episode is depicted on the medieval portal, in front of the Basilica, the perfect location for a photo-souvenir…

Not far from the centre, you will find another marvel, built in 505 and declared a UNESCO World Heritage Site in 1996. The walls in the central nave are completely decorated with golden mosaics representing the oldest mosaic cycle of the New Testament, where human figures are almost completely absent, meaning that everything is a symbol. The verdant meadow, dotted with flowers, stones, bushes, birds, extends without perspective depth, devoid of concrete life. The contrast between green and gold creates an atmosphere that hypnotizes the viewer.
Many famous artists and writers have fallen in love with Ravenna. Names like George Byron, Gustav Klimt, Oscar Wilde and Dante Alighieri, the author of the Divine Comedy and father of the Italian language, who spent the last three years of his life in Ravenna.

In the “zone of silence dedicated to Dante” you can visit the Tomb of Dante, located in a small neoclassical temple dating back to the 18th century, right next to the Basilica of San Francesco which hides a beautiful secret inside: an underground window that offers a fabulous view of the Crypt with mosaic floors. It is located below sea level and therefore full of water and goldfish. An image you won’t soon forget.
But what is the story of his burial? Between legends and truths, many stories circulate about the troubled journeys that the Poet’s body made, literally stolen by Franciscan friars, who later removed the bones from the urn to hide them in a walled-up box in the adjacent oratory. No one knew anything about it, until in 1865 a worker found by chance a rustic wooden box decorated with the inscription ‘Dante’s Bones’. Today it is kept in the Dante Museum which offers a journey along eight rooms, through the works and the days, the life and memory of the best known poet in the world. Housed in the Loggetta Lombardesca, the 16th-century monastery of the adjacent Abbey of Santa Maria a Porto, as part of a larger whole, the Ravenna Art Museum hosts periodic exhibitions featuring nationally and internationally renowned artists and painters.

Untill 14 January 2024 it will host BURRIRAVENNAORO, an important exhibition dedicated to Alberto Burri, a world-renowned artist, who in the 1980s had started an intense artistic relationship with Ravenna, marked by the conception of some cycles of works inspired by the history and artistic culture of the city.

Guidarello: the sexiest lips of the Renaissance.
Also at the MAR, an obligatory stop at the sculpture of the legendary  (and beautiful) Guidarello Guidarelli,  This sixteenth-century work has always been the object of admiration for the beauty of its face and above all of its lips … In fact, it was said that if a woman kissed her lips, she would be married within the year. She developed such a ‘kiss-mania’ that the original plate had to be replaced with a copy. Today the original is back, but it is strictly forbidden to approach it, so dear spinsters… stay away!

Ready for a dizzying vision? The next stage, a UNESCO World Heritage Site, boasts an astonishing ceiling covered with marvelous colored mosaics representing the procession of the twelve apostles and with, in the central clypeus, the baptism of Christ, represented as a young and naked man, immersed in water up to flanks. A dizzying vision and… just to avoid dizziness, you will find numerous chairs positioned in a circle. so sit back and admire. Don’t think that the city’s art scene is stuck in the past. You will also find modern mosaics scattered throughout the streets of Ravenna and hidden in the small ateliers of local mosaic artists, while a rich calendar of concerts, exhibitions, festivals take place within the city and attract passionate mosaic artists from all over the world. The magical nights of the Mosaico di Notte held in the months of July and August it allows you to visit the Basilica of San Vitale and the Mausoleum of Galla Placidia even in the evening.

TAMO is a museum dedicated to ancient and contemporary mosaics with a multimedia itinerary that ranges from fine Venetian enamels  to a “laboratory” of the art of mosaics with three-dimensional models, which retrace the reconstruction of Ravenna in ancient times. I would say an ideal information point for an adventure to discover the mosaics.

Are you a mosaicist too?
At this point, I wouldn’t be surprised if you had the desire to try your hand at ‘your’ mosaic, even a minute one, but still your creation inspired by the jewels of Ravenna. Many schools, lessons, classes, even for a few hours, such as Koko who also holds one-hour mini-courses for children.

.Or just slip into a workshop and ask (discreetly) the master mosaicist to be able to assist at his work or even teach you how to make one, perhaps small, like the one I did, well, not really a masterpiece, but a nice souvenir of this fantastic city.

AFTER THIS “FULL MOSAIC IMMERSION”… DID YOU GET HUNGRY?

The cuisine of Ravenna offers very tasty typical dishes, traditional and often of “poor” origin where nothing is wasted and nothing is thrown away. In the joyful period of the grape harvest, sugol is prepared, a pudding with ancient origins, composed of very fresh grapes cooked together with flour. In a Ravenna weekend, cappelletti cannot be missing, rigorously stuffed with squacquerone and Parmesan, in broth, with meat sauce or with butter and sage.

The two leavened tops of local gastronomy are watercress and the legendary piadina. They look the same but in fact Watercress remains thinner and is subsequently stuffed, then folded over on itself in a half-moon shape and tightened on the edges with the prongs of a fork, while the typical Piadina of Ravenna has a firmer sheet and is stuffed after cooking.

Do you want to take away the whim of making “your” piadina?
On the first floor of the spectacular  Mercato Coperto you can literally “get your hands dirty” and make a piadina, instructed by authentic local Azdores who, during a lesson of about an hour, will get you all the ingredients and guide you through the kneading up to the filling. Enjoy your meal!

Among the typical meats, mutton stands out, obtained from male sheep, marinated with salt, garlic and rosemary, cooked on the grill or stewed with shallots. I tried it at Ca de Ven, served with vegetables and the ever-present baked potatoes

The most traditional “poor” dish?
Here is the SPOJA LORDA. literally means “dirty puff pastry” and is a recycled dish that comes from the scraps of the preparation of stuffed cappelletti and as a method for reusing the leftover pastry and filling. The egg pasta, in fact, is only slightly soiled by the residual filling, creating small ravioli to be cooked in broth.

SPOJA LORDA

Ingredients
For the pastry:
5 eggs, 500g. of flour for pastry
For the stuffing:
250g. of squacquerone cheese, 200 g. of parmesan, 1 egg, 1 pinch of salt, 1 teaspoon of grated nutmeg, 1.5 l of meat broth
Method
Arrange the flour on the cutting board, break the eggs in the centre, mix everything until you obtain a firm and smooth dough and let it rest for 30 minutes covered by a plate.
In a bowl, mix the squacquerone cheese with the grated Parmesan, a pinch of salt, the egg and the nutmeg. Mix well. With the rolling pin, roll out a thin sheet and spread the mixture on half of the sheet, cover it with the other half and pass over the rolling pin, pressing well. With the toothed wheel, obtain many 1 cm squares, cut the sheet slowly. Bring the broth to the boil and cook the stuffed soup for a few minutes. Serve it hot

… AND THE OSTERIE?
Good, free-range, generous, not too expensive, with a menu of typical local cuisine.
Eating in Ravenna’s taverns means savoring Romagna on a plate. It is an experience of rediscovering ancient flavours. where the dishes are tradition and authenticity of a land, generous and sincere like its inhabitants.

Final surprise
A former industrial warehouse restored with a new concept and an alternative menu that takes us on a journey towards a slightly Tex-Mex cuisine. a little American, a little exotic: a myriad of hamburgers with selected meats, gourmet pizzas served by the shovel, unusual salads, etc…
We are at the  Darsenale Brew-pub, the first brew-pub on the Ravenna docks, a craft brewery, with an exposed production plant for Bizantina beer as well as a choice of many other craft labels.

WHERE TO SLEEP
To be close the most precious mosaics, I point out Diana, a small 3-star hotel, with only 33 rooms, a welcome signed by the unmistakable Romagna sympathy.
